166. The Perfect wine is liquor from grapes of mature vines, by means of complete fermentation.  Before it is must [EL1] . Fermentation is hastened or slowed by circumstance. The recently pressed must is valid material, but severely illicit [EL2] , externally wanting [EL3] . (1) Vermeersch, Th. Mor. III 371, requires that it (the must) begins to be fermented. Nevertheless, it is affirmed that having been fermented already, from the time at which the grapes are being pressed.

            Concerning licit [EL5] (wine), fermentation must be completed morally; just as it was more or less incomplete, greater or lesser reasons are required for the licit use of this (wine).
